I didn't try trout until last year but find it to be like salmon only cheaper, tastier, and quicker to cook! This whole meal can be prepared in as long as it takes to pre-heat an oven and cook a piece of trout - around 20 minutes.
I start by drizzling the trout with olive oil and lemon juice in a baking tin, sprinkling with tarragon, paprika, and coriander, and shoving in the pre-heated oven at 180°C for 12-14 minutes.

Meanwhile, I boil the kettle and add the boiled water to couscous with a pinch of salt and a little butter. Once the water has absorbed I add a little tomato puree before mixing into the stir-fried vegetables. If using peas and/or raisins I throw these in the wok about a minute before the couscous.
