This is one of my favourite recipes, or at least one of the ones I use most, due to my habit of buying bananas and then forgetting to eat them - it's a great way of using up brown, squidgy bananas! The recipe is just a plain banana bread but I tend to throw in some raisins as well just to mix things up a bit. I think it would also work well with chocolate chips or chopped nuts - maybe walnuts?
It's a very simple recipe, even if, like me, you don't possess the food processor called for by the recipe - wooden spoon works just fine!
It does, however, give you a good workout - painful if you've been to the gym the night before, as I have learnt. Basically, you just whack 270g soft brown sugar in a bowl with two eggs, beat until combined, and then add 200g peeled & mashed bananas, 280g plain flour and 1tsp each of baking powder, bicarbonate of soda, cinnamon and ginger. Finally you stir in 140g melted butter and pour into a greased 23x13cm loaf tin.
Once in the tin you just bang it in the oven at 170° for an hour... Et voila!
