Tuesday.

It's Tuesday lunchtime. I'm still in my pyjamas despite having been up since 7.30. My excuse for this is twofold; one, I went out last night so it's allowed, two, it's too cold to take my pyjamas off to put real clothes on.
Last night was night out with housemates, something possessed me to wear heels, which would have been fine had the SU Club night not been cancelled, requiring me to walk halfway across Sheffield to find somewhere that was open on a Monday night, that wasn't Corp or Plug (we can never agree on somewhere to go...). This resulted in me removing the aforementioned heels and thus ruining my pretty new tights. Bad times.
Today I have made Roasted Tomato and Pepper Soup, which I'm currently hugging a bowl of. It is beaut so I thought I'd share the recipe - adapted from one my friend and I used for a dinner party about three years ago so I can't remember where it originally came from.

I used eight tomatoes, a red pepper, two cloves of garlic and a handful of basil leaves. I also threw in half a yellow pepper and half an onion that were hanging round in the fridge looking like they needed using.
Basically, peel your garlic cloves, slice your tomatoes in half and your peppers in quarters, onions into big chunks, and chuck in a roasting tin. Drizzle liberally with olive oil and give everything a good shake to make sure it's covered. Put in the oven at 180°C for 20 minutes or so, then turn over all the veggies - I used a big plastic spoon for this. Return to the oven for another 20 minutes before spreading the basil leaves out on top and popping back in the oven for another five minutes. Meanwhile, prepare a stock cube in about 150ml boiling water in a large bowl. Spoon your veg into the bowl and whizz up with a hand blender (obviously you can use a jug blender should your kitchen be so equipped). I've served this sprinkled with a little bit of grated cheddar and another basil leaf. Half is my lunch today and the other half will be going in the freezer for a lazy lunch some time.
I'm planning a bit of a bulk-cooking day, I'm gonna make a curry and a chilli as well so that I've got some meals ready made to save on time for the next couple of weeks, letting me (hopefully) get lots of work done!
