Caramel Brownies

I made these late on Saturday night and spent Sunday practically inhaling them. They're sticky and crumbly and entirely impractical to eat, but delicious and definitely worth the mess! I used this recipe but translated all the measurements into English as I don't own measuring cups and what the hell is a stick of butter!? I also left out the pecans, as no-one in our house likes nuts, and the drizzle on top  because I'd eaten the rest of the chocolate by the time the caramel set.

For the brownies:
100g Plain flour
30g Cocoa powder
1/4tsp Salt
170g Butter
120g Dark chocolate
4 Medium eggs
165g Soft brown sugar
200g Granulated sugar
1/2tsp Vanilla Essence
For the caramel:
200g Granulated sugar
1/4tsp Lemon juice
50ml Water
120ml Double cream
45g Butter
1/4tsp Salt
1/2tsp Vanilla Essence

1. Pre-heat the oven to 180°C. Line a 9 x 13" baking tin with baking parchment.
2. Sieve flour, cocoa and salt into a medium bowl.
3. Melt the chocolate and butter until smooth. You can do this the proper way, or the lazy way in the microwave like me.
4. Whisk the eggs in a large bowl. Add the sugars, beat until combined, then stir in the melted chocolate mixture and the vanilla.
5. Fold in the flour mixture until just combined. Transfer to the baking tin and bake in the centre of the oven for 20-22 minutes, or until a knife comes out with just a few crumbs clinging to it.
6. Whilst the brownies are baking, make your caramel. Start by adding the sugar, lemon and water to a heavy-bottomed pan.
7. Bring to a gentle boil for 8-10 minutes, swirling the pan regularly so the caramel doesn't burn. It's done when it's a medium amber colour.
8. Remove from the heat and slowly pour in the double cream. Be careful as it can spit! Stir gently until it's all mixed in.
9. Gradually add in the butter, stirring until melted.
10. Whisk in salt and vanilla, then pour over brownie. Spread out with a spatula if necessary.

I ended up leaving mine in the fridge overnight to set before cutting it up with a knife run under hot water. I've cut the water in the caramel here because mine was a bit too runny..
